Heat a large, heavy based pan or hotplate on a medium heat.
Mix the flour, salt and oil together in a bowl.
Gradually add the water and mix in until you have a soft dough.
Knead well and stand for about 5 mins. in a plastic bag.
Break into 8 equal portions and roll each into a ball.
Roll each ball into a circle of about 12cm diameter.
Place into pan (or hotplate) and cook until small bubbles start to form.
Turn over and cook the other side until brown patches develope.
Flip back over to the first side and press down on small areas
of the roti with a clean tea towel to make it 'puff' up.
Serve hot with ghee or butter.
