Bring the water to the boil in a large saucepan.
Add the lentils. Remove any 'scum' that forms on the surface.
Add the turmeric, lower the heat and partially cover.
Simmer for about 40 mins. or until tender.
Add the salt, chillies, garlic and ginger then remove from the heat.
In another pan, heat the oil then add the curry leaves and seeds.
Sizzle for a few minutes then add the onions. Brown gently
Add the tomatoes and coriander leaves
Pour over the lentils and stir in.
