- 2 inch stick cinnamon
- 5 cloves
- 1 star anise
- 2 cups diced meat (any type)
- 3 cups warm water
- 1/2 onion, finely chopped
- 1 clove garlic, crushed
- 1/2tsp grated fresh ginger
- 1/2tsp salt (or to taste)
Coursly grind the cinnamon, cloves and anise.
Place into a pot with the rest of the ingredients and bring to the boil.
Turn down the heat and simmer gently until the meat is cooked.
Strain the meat and reserve the liquid.

- 3 green cardamon pods
- 6 cloves
- 2 inch stick cinnamon

- 2 cloves garlic, crushed
- 1/2tsp grated fresh ginger
- 3-5 curry leaves
- 1 cup basmati rice, washed thoroughly
- 1tsp salt (or to taste)
- 3 fresh green chillies, seeded and finely chopped
- 2tsp currypowder
Heat oil in a large pan over medium heat.
Add whole spices, onions, garlic, ginger and curry leaves. Brown gently.
Add rice to the pot and fry until crisp.
Add strained meat, salt, chilli and currypowder.
Stir and continue to brown gently.
Add 3 cups of fluid (reserved liquid + water), stir then cover with a tight fitting lid.
Simmer gently until done.
