Heat oil in a non-stick pot and add curry leaves, cumin and mustard seeds.
When the seeds start to 'pop' add the onions and brown gently.
Add the potatoes and stir in the salt, turmeric, chillies and curry powder.
When the potatoes are half cooked stir in the garlic.
Cook until the potatoes are well done then remove from the heat.
Garnish with the coriander leaves.
